With all the running around we do its no wonder we need some quick “go-to” dinners that are reasonably healthy, and taste great. Believe it or not there are plenty of options out there and today I would like to introduce you to the Panini.

A panini is essentially a grilled sandwich. They actually sell Panini presses, I have one made by Cuisinart but Hamilton Beach and Oster make one that are a bit more budget friendly.

Pear and Cheddar Panini (2 servings)

  • 8 slices of Bakery Rye bread
  • 4 thickly sliced Cheddar Cheese slices
  • 2 Asian pears sliced thin

Arrange cheese first on the bread, add pear and top with 2nd slice of bread. Put into press and press down. Let grill about 2 minutes, until cheese is melty and lines from the grill form on the bread, nice and golden. Rest assured if you do not have a panini press you can make as you would a classic grilled cheese in the skillet. To press, use a slightly smaller skillet and press down.
