Connecticut's Food Network Contestant Shares a Recipe

Chef Hunter Zampa of Stamford might not have won Rachael vs. Guy: Kids Cook Off on the Food Network, but he certainly won our hearts.  We, at HamletHub, are sure we'll be seeing more of him soon... and we're "game" to try all his delicious fare.

Here, he shares with us his seasonal Buttercup Squash Soup:

3 tbsp. butter

1 cup chopped onion

2 carrots, peeled and chopped

1 potato, peeled and chopped

1 jalapeno, seeded and chopped

1 buttercup squash, peeled, seeded and chopped

4 cups chicken or vegetable stock

1 cup cream

Salt

Pepper

Green Onions, to garnish

1. In a large pot, melt butter over medium heat and saute onions.

2. Add carrots and jalapeno and stir

3. Mix in squash and potato and pour the stock over them.

4. Simmer for 30 minutes until vegetables are tender.

5. Puree soup in blender until creamy.

6. Add soup back to pot and add cream.

7. Salt and pepper to taste.

8. Garnish with green onions and serve.
