Well, full disclosure, I am indeed an Earth Day baby... My "Birthday is Earth Day!" So I am deviating a bit from my "normal" birthday cake of choice... CARROT! This year I decided to give myself the world... in a cupcake!
- 4 C Flour
- 1 tsp Salt
- 4 tsp Baking Powder
- 1 C Butter
- ¾ C sugar
- 4 eggs
- 2 C heavy cream
- 2 tsp Vanilla
- Blue and green food gel colors
Mix all ingredients with a mixer. Grease muffin tins. Divide batter into 2 bowls, color one blue and one green. Add 1.2 of each color to each cupcake pan. Preheat oven to 350 degrees and bake for 20-40 minutes depending on the size of the muffin tin.
Frost with Vanilla frosting (clouds) , but massively cute without frosting!!!
