Here are a few tasty snacks for Super Bowl Sunday

Real French Onion Dip 

1 tsp extra virgin olive oil

1 large onion, diced

1/4 tsp sugar

1 8-oz package light cream cheese, softened

1 cup light sour cream

1 tbsp chopped parsley, plus more for garnish

1 1/2 tsp lemon juice

1 1/2 tsp Worchestershire sauce

salt and pepper, to taste

  1.      In a medium skillet over medium heat, add the oil. Once the oil is warm, add the onions and season them with salt and pepper. Allow them to cook until they are translucent, then lower the heat to medium-low and add the sugar. Allow the onions to cook, stirring often, until they are deeply browned, which may take at least 10-15 minutes.
  2.      Once the onions are finished cooking, set them aside.
  3.      In a medium bowl, combine the onions with the cream cheese, sour cream, parsley, lemon juice, and Worchestershire sauce. Beat the mixture with a hand mixer until everything is well combined. Taste the dip for seasoning, and add more salt and pepper, if necessary.
  4.      Serve chilled with crudite or chips.

Mozzerella Cheese Sticks

Packaged String cheese sticks – fat free

1 egg beaten

Flour

5 Tablespoons of bread crumbs

2 Tablespoons Parmesan cheese

  1.      Cut cheese sticks in fourths
  2.      Freeze cheese sticks
  3.      Once the cheese sticks are frozen, put them in a gallon baggie with flour and toss until coated
  4.      Dip them in the egg and then roll them in the bread crumb mix. 
  5.      Place the cheese sticks on a parchment paper lined baking sheet. 
  6. Bake at 400* for 4 minutes or until crisp.
  7. Watch them closely  pull out and cool.

 

Mojito Light

2 ounces light rum

1 ounce Splenda syrup, Da Vinci’s Sugar Free Sweetener Syrup

1 ounce lime juice

7 mint leaves

Splash of club soda

  1.      Using a mixed drink shaker, muddle the mint leaves to release their oils with a lime wedge.
  2.      Add ice and the remaining ingredients and shake to combine.
  3.      Pour the rum mixture into tall glass and top with soda.

Baked Tostito Scoops Nacho Cups

32 ea Baked Tostitos Scoops

¾ cup low sodium black bean refried beans

1 cup Pico de Gallo

½ cup reduced fat mexican cheese, Shredded

½ cup sour cream

½ medium avocado, diced into small pieces

¼ cup cilantro

  1. Fill scoops with refried beans, pico de gallo, sour cream, and avocado.
  2. Top with shredded cheese and cilantro.
