RECIPE OF THE WEEK!

With September being "National Better Breakfast" month I thought I would send a recipe that can be made ahead and frozen individually.

When your mornings are hectic getting everybody ready and out the door, this bar with a piece of fruit and a cup of coffee or almond milk,

you are good to go.

 

MORNING GLORY BAKED OATMEAL BARS

 

  • 1/3 cup walnuts, chopped
  • 1 tablespoon ground flax + 3 tablespoons water
  • 2 1/2 cups old fashioned oats (gluten-free if necessary)
  • 1/4 cup coconut sugar or brown sugar
  • 2 teaspoons cinnamon
  • 1/4 teaspoon salt
  • 1 cup mashed very ripe bananas (2 large)
  • 1 cup unsweetened vanilla almond milk
  • 1/4 cup unsweetened applesauce
  • 1 teaspoon vanilla
  • 1 cup diced apple(use a large apple and use leftovers for topping)
  • 1/2 cup shredded carrots
  • 1/4 cup dried cranberries or raisins
-Preheat oven to 350. Spread walnuts on a lined baking sheet. Bake 7-8 minutes. Set aside.
-Spray an 8x8 baking dish coated with cooking spray.
-Place flax and water in a small bowl, stir to combine. Set aside for 5 minutes to gel.
-Place 1/2 cup oats in blender or food processor. Blend until it resembles flour. Put into a large bowl and stir in remaining 2 cups oats, coconut sugar, cinnamon, salt, and walnuts.
-Mash bananas in a medium bowl. Add almond milk, applesauce, vanilla, and flax mixture. Mix well and fold in apple, carrots, and cranberries.
-Pour wet ingredients into dry ingredients and stir until just combined.
-Pour into prepared pan. Top with thin sliced apple(optional).
-Bake about 40 minutes,
-Slice into 9 pieces.
 
SERVINGS: 9 (1 BAR); CALORIES: 190; PROTEIN: 4gr.;FIBER: 5gr.
