RECIPE OF THE WEEK!

Welcome to the holiday season. Every one is so busy running here and there...what better thing to do then put that crock pot to good use.

The aromas that will come from this will be so inviting. Add a salad and if wanted some brown rice or quinoa, voila a quick meal.

 

SLOW COOKER MOROCCAN CHICKEN & OLIVE TAGINE

  • 2 pounds (8) boneless skinless chicken thighs
  • 4 medium carrots, cut in 1" pieces
  • 1 medium onion, chopped
  • 1/3 cup dried prunes, halved
  • 1/2 cup pitted green olives
  • 3 garlic cloves, chopped
  • 2 tablespoons flour
  • 2 teaspoons paprika
  • 2 teaspoons cumin
  • 1 teaspoons cinnamon
  • 2 teaspoons fresh ginger, minced
  • 1 cup chicken broth
  • 1 teaspoon salt
  • fresh ground black pepper, to taste
  • chopped cilantro, for garnish
  • lemon wedges for serving
- In a slow cooker, combine chicken and all ingredients (up to and including pepper). Stir to combine.
- Cover and cook on low for 6 hours.
- When ready to serve, sprinkle with cilantro, if using and serve with lemon wedges.
