Lemon Caper Sour Cream Pasta

What to make when you are tired of your grill… this is a question that recently plagued me. Fortunately the cool temperatures allowed for a “Pasta Night” in our house. Challenge was something fresh and something that the kids would also like. It’s also meatless!

Lemon Caper Sour Cream Pasta

1 Lemon juiced

½ cup sour cream

½ cup grated parmesan cheese

2 Tbs. capers (rinsed and drained)

1 box pasta of your choice. I used medium shells

Prepare pasta according to the instructions on the package. In a pasta bowl add capers, juice of the lemon, sour cream and the parmesan. Mix together.

When pasta is done, drain and add to Pasta bowl. Stir til combined and coated and serve.
