RECIPE OF THE WEEK!

I was searching for a quick and easy salad option and I came upon this.

 

It took literally minutes to throw this together and it is delish. I served it at night when I made "fajitas". You can easily add to it with grilled chicken or other proteins.

 
 

FIESTA BEAN SALAD

 
  • 2 garlic cloves, minced
  • 3 tablespoons fresh lime juice
  • 1 tablespoon olive oil
  • 1 teaspoon cumin
  • pinch of crushed red pepper flakes (optional)
  • 1/2 teaspoon salt
  • 1 15oz. can black beans, rinsed and drained
  • 1 cup canned chick peas, rinsed and drained
  • 1 cup cherry tomatoes, halved
  • 1/4 cup minced red onion
  • 1/4 cup cilantro
  • 1 medium avocado, diced

- In a large bowl combine garlic, lime juice, oil, cumin, crushed red pepper flakes and salt. Mix well.

-Add black beans, chick peas, tomato, onion, and cilantro to bowl. Mix well.

-When ready to eat gently mix in avocado.

-Serve immediately.

SERVINGS: 4 (1 cup); CALORIES: 335; PROTEIN: 14gr.; FIBER: 15.5gr.
