You don't have to wait any longer! It's National Kale Day!

I am not a foodie, at all. And I will admit, I that although I had seen the curly-edged green at supermarkets for quite a whilel, I just never partook in the green food fad.
Little did I know what I was missing.
One taste of New Morning Market's Kale Salad was all it took. I was hooked. A couple of trips to the Provender a week ... I knew I was a goner. I love Kale.
While eating the kale leaf itself makes me feel a little like a rabbit, it's the dressing it up that is the real fun. Though I have tried flat leaf version, I personally like the curly version and I was happy to just get some in my CSA box last week.
I have tried kale with beets and feta and a delicious orange vinaigrette, which was a great summer dish. I also did basic Kale Chip -- baked in the oven with a little sea salt, olive oil and pepper -- and even the kids were digging in. So good.
So, on National Kale Day, I am sharing it with you.

Lemony Garlic Kale with Red Pepper
4-6 cups kale, sliced to bite size with ribs removed
juice of 1 lemon
3-4 tablespoons olive oil
2 cloves garlic, minced
salt and pepper to taste
hot red pepper flakes, to taste
2/3 cup Pecorino Romano or grated parmesan
1/2 cup bread crumbs from lightly toasted bread
Whisk together lemon juice, olive oil, garlic, salt, pepper, and hot red pepper flakes. Pour over kale in serving bowl and toss well. Add the grated cheese and toss again. Let sit for at least five minutes. Add the bread crumbs (or leave it out if you want gluten free) and enjoy!
