Beauty meets health in this artisitc looking mason-jar salad created by Laura Wolfe, RDN, CDN, CDE. And, RMACT explains that infertility and food happen to have a relationship that is complex and layered (sort of like the Laura's pretty mason-jar salad creation!)

It’s Spring! Think Salads!
Fiesta Salad
(Makes One Serving)
Add the ingredients in layers into a Mason Jar:
¼ cup black beans
¼ avocado
Juice from one small lime
2 tbsp olive oil
3 tbsp fresh cilantro
¼ cup corn
½ chopped red or green pepper
4 large red leaf lettuce leaves, torn into bite size pieces
5-6 black baked corn tortilla chips, slightly crumbled
Store in refrigerator until ready to serve.
When ready to eat, pour salad contents onto a plate, so the oil and lime juice are distributed evenly over the vegetables. Serve immediately.

Laura's "hint":
Create 5 jars every Sunday, so lunch is made for Monday through Friday. I prefer the salad dressing on the bottom and then I shake gently to mix.
