
Spoon cakes are not quite cake, not quite cobbler, but a light and luscious dessert made with lots of fruit! They are simple to make, with only 6 necessary ingredients and countless ways to add and adapt flavors to make it your own.
We love using fresh strawberries in the kitchen, but you could easily use any juicy fruit like raspberries, blackberries, cherries, peaches, and more! Make it for the holiday weekend by using strawberries, raspberries (or both), and then stud the top with blueberries for an easy festive treat to share!

Ingredients (6 servings)
1 Stick & 1Tbsp Butter
1 Cup Fruit
2/3 Cup Brown Sugar
1/2 Cup Milk (pref. whole)
1 Cup Flour
1 Tsp Baking Powder
1/2 tsp Salt (optional)
Add-Ins:This spoon cake is an easy and fun way to use up fresh or frozen fruit! We love it with strawberry but it works with peaches, raspberries, blackberries, and blueberries too! You can also adapt it to include seasonings like cardamon, ginger, or cinnamon sprinkled on top before baking - or -add some freshness with herbs like basil or mint before serving.
Using Frozen Fruit- If using frozen berries thaw in microwave before mashing. Be sure to get as much liquid out of the fruit as you can because it adds to the moisture of the cake! Freezing strawberries are a great way to preserve fruit before it goes bad or extend the freshness through the season but fresh fruit will macerate easier.
Cook & Prep time - 35 Min
Steps:
1.Preheat oven to 350 degrees, grease 8" baking dish (round or square) with butter - use a 9"x13" to serve 12 large portions or up to 24 smaller portions (think brownie size).
2. Wash and stem strawberries. Mash with fork or potato masher to release juices. Mix in 1/3 c. brown sugar.
3. Melt 1 stick of butter and whisk together with remaining brown sugar, milk, and salt (reduce or omit salt if using salted butter).
4. Add flour and baking powder to butter and sugar mixture and continue whisking until smooth.
5.Transfer batter to baking dish and smooth to cover corners.
6.Top with mashed strawberries and juices. Bake 20-25 min. or until toothpick comes out clean in middle. Let cool 5 minutes and serve with ice cream or alternative toppings.
