For the Grilled Veggies:
- 2 bell peppers, sliced
- 1 zucchini, sliced
- 1 red onion, sliced into rounds
- 1 cup cherry tomatoes
- 1 tablespoon olive oil
- Salt and pepper to taste
- 1 teaspoon ground cumin
- 1 teaspoon smoked paprika
- 2 cups shredded green cabbage
- 1/4 cup chopped fresh cilantro
- Juice of 1 lime
- 2 tablespoons mayonnaise or Greek yogurt
- Salt and pepper to taste
- 8 small corn tortillas
- Sliced avocado
- Crumbled feta or cotija cheese
- Lime wedges
- Preheat the grill to medium-high heat.
- In a bowl, toss the sliced bell peppers, zucchini, red onion, and cherry tomatoes with olive oil, cumin, smoked paprika, salt, and pepper.
