Four questions with Patrick Detscher, founder of Patrick Detscher Bakes.

Why did you start your business?

My business venture was started decades and many seasons ago as an immigrant business perfected in Brooklyn New York and brought to Byram, Connecticut so that two newly minted American boys could learn to swim. They became men and mastered both [swimming in] the Sound and the art of generosity. The Detscher’s Variety Bakery legacy lives within the formulas shared with me. There are few who would attempt to reboot such a venture, as it can only be done one way; with Love.

What is your best-selling product/service?

Freshly fermented pastry, like nothing found within these United States that can be shipped nationwide. Pastry, when done in the European traditions, digests the sugar and makes for a taste never forgotten, but long gone.

How many local businesses do you use to support your business (products and services) and can you name them?

The numbers are many, but the list grows shorter as packaged food replaces fresh. Fresh and natural products are rare and dear. I do not use plastics or canned fruits. Often, the fours used are still warm from the milling process. Missing is; organic pumpkin puree, if any CT farmers want to produce, I will purchase the entire crop!

Have you "reimagined" your small business?

My business ventures are finely tuned to the ebb and flow of nature’s rhythm. I don’t slow often and my knowledge grows daily. The pandemic has not slowed me nor will the heartless real estate prices in the northeast. My venture has visited a Connecticut Culinary Institute, a Greenwich French Bakery, a church kitchen, and a leased bakery in Carlisle, PA. Let’s close this with the notion that the nation is ready for a reset, and what once was is headed back again!
