Columbus Day Weekend Recipe: Hunan Cashew Chicken

My family loves Chinese food. Problem is take out can get pretty pricey. So I need to occasionally need to roll up my sleeves and make my own. Lately we have adapted a lower carb way of eating, so this fit in perfectly! It's great for a week night or when you really don't feel like going to pick up your take out! Enjoy!

1 package stir fry beef

2 chicken breasts cut into bite size pieces

2 tbsp vegetable oil

2 cups mix of zucchini, green beans and carrot, sliced bite size

3 garlic clove, finely chopped

1 thumb size ginger, peeled and finely chopped

For the Sauce:

1 tsp granulated brown sugar (I used a brown sugar substitute since I watch carbs)

1 tsp rice vinegar

1 tsp cornstarch

1½ tbsp soy sauce

Stir fry beef and chicken in oil until brown, Stir sauce together and set aside. Add garlic and ginger. Saute for 1 minute then add veggies. When veggies are softer to the bite, add sauce. Stir fry a few more minutes, add to plate and serve!
