Eastchester Neighbor Toby Amidor Launches Her New Book The Greek Yogurt Kitchen

Editor's Note: Yesterday I was invited to an intimate luncheon in Scarsdale at the home of author Toby Amidor to discuss (and taste!) recipes from her new book THE GREEK YOGURT KITCHEN. I took my mother with me as we were both intrigued upon reading the book synopsis on the fact that Greek yogurt can be used or substituted in an array of recipes - and boy, were we in for a delicious treat.

Yesterday inside the kitchen of experienced nutrition, and now book author, Toby Amidor breathtaking kitchen of her Scarsdale local media were to taste a variety of recipes from her, THE GREEK YOGURT KITCHEN, along with a brief demonstration how each dish was assembled.

In her new book, THE GREEK YOGURT KITCHEN, more than 130 delicious, healthy recipes for every meal of the day, Toby shows readers how to cut back on fat and calories without compromising flavor. She shares how Greek yogurt is one of today's most versatile and nourishing ingredients and how it can be used in unexpected ways, making even the most bad-for-you foods healthier, tastier and more satisfying.

During the event Toby was able to to answer a common reaction that people initially have to her book: How is it possible Greek yogurt be used or substituted in recipes without losing the taste?

That questions was not only answered during Toby's brief breakdown of dishes from the luncheon menu, but after guests actually tasted the dishes, the oohs and ahhs (and second helpings) proved that they were just as/more delicious as the original recipes. After try each dish everyone had the same reaction - "I can't believe there is Greek Yogurt in here, it tastes just as good (sometimes they said, even better than the original)."

The menu for the luncheon included Peach Oatie Smoothie, Berry Greek Smoothie, Fig and Walnut Parfait, Crustless Broccoli and Chedder Quiche, Lemon-Blueberry Stuffed French Toast, Zucchini Bread, Salad Parfait, Dirty Blondies and Peanut Butter-Banana Ice Box Bars.

Toby believes that healthy and wholesome can also be appetizing and delicious - all of which deemed to be true after guests savored every bite from the luncheon menu. (I personally can not wait to make the Peach Oatie Smoothies and Dirty Blondies at home!)

Toby is also the founder of Toby Amidor Nutrition, where she provides nutrition and food safety consulting services for individuals, restaurants and food brands. She is a nutrition expert for FoodNetwork.com, writing for their Healthy Eats Blog, a regular contributor to U.S. News and World Report Eat + Run blog, and an adjunct professor at Teachers College, Columbia University.

Over the past two years, Toby has been a member of the National Dairy Council's Lactose Intolerance Speakers Bureau. She is the nutrition adviser for Sears' FitStudio where she oversees the content and contributes articles to the FitStudio community.
