Irish Barman & Builder Gives New Life to Local Pub

Fairfield, CT - Grace O’Malley’s Irish Pub and Restaurant, located at 1494 Post Road in Fairfield, will officially open its doors March 8, 2018 as a lead up to its St. Patrick’s Day Celebration. You may recognize the location as the former Anna Liffey’s Irish Pub. Mr. Derek Burke of Trumbull,  former employee and builder of the original bar, is opening Grace O’Malley’s to bring a local favorite back to its former glory under the right management.  

Grace O’Malley’s is a warm family-owned pub & restaurant boasting a commitment to Irish hospitality. Derek shares, “Pubs in Ireland can be like a second home where everyone is welcome.” Grace O’Malley’s will bring Fairfield and surrounding communities not only a place for lunch and dinner, pint after work or dancing on weekends, but a place for family and friends to gather and share memories. “We will always make you feel at home," says Derek. 

Originally from County Galway, Ireland, Derek has lived in the Fairfield area for the last 30 years with his wife Laura and two children. In addition to working as a bartender and carpenter at Anna Liffey’s, he owns a landscaping company.    

Derek never imagined owning the bar, but when Anna Liffey’s started to close its doors, he knew there was a need in the neighborhood and potential for the pub if done correctly. With support and encouragement from Fairfield Center Jewelers (the building's owner), Derek began the journey to open Grace O’Malley’s.   

Derek and Laura believe the success of Grace O’Malley’s will be their “Top-notch Irish hospitality and strong relationships with customers." They add, "We are committed to the Fairfield Community and its growth — including local initiatives, events and charities."   

Grace O’Malley’s is devoted to making every special event, sporting event, fundraiser or night out the absolute best for its customers. The pub interior and two bars have been refurbished flaunting Irish charm and craftsmanship, and eight new HD TVs and a custom sound system have been added to support such entertainment as live music, comedy nights, trivia every Tuesday, traditional Irish music every Wednesday, and a late night DJ every Friday and Saturday. Sports fans will love the 40 ft. screen and 1080p projector with 4K Ultra HD for watching their favorite teams. Grace O’Malley’s has the NFL Ticket, Soccer, NBA, MLB, NHL and Rugby.  

Derek and Laura expanded the pub by adding a party room capable of holding 200 people, built for celebrating a family or local event like bridal showers, graduations, communions, networking events, and business functions. Grace O’Malley’s menu offers Irish influenced dishes such as Shepherd’s Pie, Fish & Chips, and Irish Bangers & Mash, as well as other pub classics and creative additions like French toast corned-beef sandwich with maple syrup mustard dipping sauce.
