Kale Harvest Salad Recipe from Muscoot Farm

October Recipe of the month: Kale Harvest Salad

INGREDIENTS

4 cups chopped kale
1 apple thinly sliced
¼ cup dried cranberries
¼ cup pecans (candied pecans are delicious too)
¼ cup pepitas
½ cup pancetta

3 tsp red wine vinegar, 1 tsp dijon mustard, 1 clove garlic minced, 1 shallot diced, 1 tbsp honey, 2 tbsp olive oil,
salt & pepper to taste


DIRECTIONS


•Whisk together the vinegar, honey, mustard, shallot, garlic, and olive oil until emulsified. This keeps great in the fridge for a few days!
•Place chopped kale in a bowl, saute, pancetta until crisp, then add to the kale, add vinegrette, cranberries, pepitas, S/P to taste. Toss for 1 minute. last add apple slices and pecans on top, serve.
(Pancetta and pecans optional)
