St. Patrick's Day Weekend Recipe: Glazed Corned Beef Recipe

This tasty recipe's secret is the glaze makes the corned beef crisp on the outside and moist on the inside unlike some of the boiled or crock pot versions. The brown sugar is a perfect compliment to the salty taste. Serve it with boiled red potatoes, carrots & cabbage.

Corned Beef Recipe

Ingredients:

    1/2 cup    light brown sugar

    1/3 cup    honey mustard   

       5 lb      corned beef with pickling spices

Directions:

  •       Heat oven to 325°. 
  •       Place meat in roasting pan and cover with boiling water till 1/2 submerged.
  •       Sprinkle with pickling spices and cover with aluminum foil. 
  •       Bake 2 hours.  Cool in liquid. 
  •       1 hour before serving, drain.
  •       Mix other 2 ingredients, cover beef with it and cook 30 minutes.

 For a little kick you can prepare the following Mustard/Horseradish Sauce

1 tbsp Dijon mustard
1 tbsp whole grain mustard
1 tbsp honey
1 tsp prepared horseradish
