Recipe of the Week: Roasted Cauliflower

Roasted Cauliflower

This recipe will make the most ardent cauliflower hater into a cauliflower-lover! Also works well with broccoli, brussels sprouts or any other cruciferous vegetable.

1 head cauliflower (may be white, orange, or purple!)
2 T Olive oil
2 T Balsamic vinegar
Salt & pepper, to taste

Preheat oven to 400º
Cut up cauliflower into bite-size florets
Toss florets in a bowl with olive oil, balsamic vinegar, salt and pepper.
Arrange florets on a jelly roll pan or cookie sheet, cut side down.
Roast for 25-30 minutes or until well-browned.
