Here is a vegetarian option for your meal rotation.

SPICY BLACK BEAN BURGERS WITH CHIPOTLE MAYO

  • 1 10oz. can black beans, rinsed and drained
  • 1/2 red bell pepper cut into 2" pieces
  • 1/2 cup chopped cilantro
  • 3 garlic cloves, minced
  • 1 large egg
  • 1 tablespoon cumin1/4-1/2 teaspoon Kosher salt (to taste)
  • 1 tablespoon hot sauce (optional)
  • 1/2 cup quick oats
  • 1 medium avocado

-Dry beans well after rinsing.

-In a medium bowl mash beans until thick and pasty.

-In food processor or blender, finely chop bell pepper, cilantro, scallions, garlic. Then add eggs and spices. Stir into mashed beans.

-Divide mixture into 4 patties (slightly oiled hands help). Place onto wax paper lined flat pan. Freeze at least 2 hours.

-Heat a lightly oiled skillet. Cook frozen burgers about 7 minutes on each side.

CHIPOTLE MAYO

  • 3 1/2 tablespoons light mayo
  • 1 tablespoon canned chipotle in adobo sauce

-Combine mayo and chipotle.

SERVINGS: 4 (1 BURGER +MAYO + 100 CALORIE BUN + 1/4 AVOCADO). CALORIES: 363; PROTEIN: 18gr.; FIBER: 15gr.
