
PastaPresta was conceived in the quiet streets of Milan where Italian families gather to purchase fresh pasta, made daily on premises. Husband and wife team, Bill and Meri Erickson of New Canaan, Connecticut, along with their partner Mario Cavestany of Madrid, Spain, are bringing Farm to Table Pasta to Fairfield County via PastaPresta.
Located at the entrance to the SoNo MarketPlace in South Norwalk, Connecticut, PastaPresta offers fresh pasta, crafted daily using farm fresh ingredients and seasonal produce. PastaPresta will celebrate its grand opening on May 23, 2013 joining more than fifty vendors at SoNo Marketplace - the European-style Marketplace housing local merchants, artisans and food purveyors all under one roof. In addition to the indoor market, an additional outdoor farmer's market is planned for the Spring/Summer season.
Pastation
PastaPresta will feature the U.S. debut of the Pama Parsi Macchine (or Pastation) designed by Pama Roma of Rome, a leading global manufacturer of pasta machines. Pastation is ideal for the Marketplace venture measuring only 150 cm wide.
Menu Selection
Customers can choose from the egg, spinach and whole wheat pasta or opt for the special flavor of the week that highlights seasonal ingredients including heirloom tomato, roast garlic, squid ink, beet, cracked pepper and arugula, among others. The Pastation offers customers the ability to have their pasta cut on the spot into a variety of widths including spaghetti, linguini, fettuccine and Pappardelle. Decorative-shaped pastas are also available including Bucatini (thick spaghetti-like strands); Gigli (cone-shaped flower) and Casarecce (twisted) as well as fresh lasagna sheets.
PastaPresta offers a limited selection of sauces and pestos for sale through private label by Pemberton’s Foods Inc. These small batch products are handcrafted in Maine from artisaninspired recipes and made using all natural ingredients. Flavors include Sundried Tomato Pesto and Artichoke & Spinach Pesto.

Eggs: Pete and Gerry's Organic Pastel Blue Heirloom Eggs of Monroe, NH. Sourced from cage-free Ameraucana hens fed a rich diet of whole cereal grains, marigolds and alfalfa grasses
Ricotta (Ravioli): Maplebrook Fine Cheese of Bennington, VT. Made fresh with no preservatives using rBGH-free milk from Vermont family farms. Artisans hand-make the Ricotta in small kettles, hand-dip, and hand-pack each container
Produce: Spinach, beets, squash, mushrooms, heirloom tomatoes, arugula and other fresh produce is sourced from local farms in Connecticut and the Hudson Valley, New York.
