Strawberry Hummus Protein Waffles

Hummus has long been a healthy, on the go snack for me. Whether I grab a bag of baby carrots or spread on some whole wheat bread, it has staved off my afternoon slump for quite some time. However, since I've always considered the spread to be a savory option when my sweet tooth takes over, I've opted for less than stellar choices to soothe a sweet craving. 

So, I was pleasantly surprised when Lantana Foods released their brand new fruit hummus line. With flavors like strawberry, mango, blueberry, and cherry, no matter my mood, I can find one that satisfies.

Since many of us enjoy starting our day on a sweet note, I created this super quick, protein-packed waffle recipe that's perfect for busy mornings. You won't feel sluggish or guilty about eating these waffles, because not only does Lantana Strawberry Hummus add a delicious fruit flavor, antioxidants, and protein, but it also gives the waffles a gorgeous pink color. No worries if you don't have a waffle iron, you can use a frying pan instead to make just as flavorful pancakes.  

Strawberry Hummus Protein Waffles

Ingredients: 

  • 2 cups pancake mix
  • 1/3 cup Lantana Strawberry Hummus
  • 3 tbsp. Water
  • Vanilla extract (optional)
  • Cooking spray

Directions:

Combine the pancake mix, Lantana strawberry hummus, water, and vanilla extract (if desired) in a small mixing bowl. Heat a waffle iron and spray with nonstick cooking spray, butter, or coconut oil, and add two tablespoons of the waffle mix per waffle. Heat mixture for 2-4
minutes, depending on your iron and desired firmness. Top with more hummus and fresh berry slices (or the fruit of your choice), or wrap them in paper towels and eat plain as you head out the door (like I did).
