As Appétit Bistro continues to thrive in its intimate 30-seat eatery tucked within an unassuming little strip mall in Port Chester, NY, restaurateur Edwin Montoya prepares to introduce his modern French bistro to a new audience in South Norwalk, CT. Appétit Bistro, which straddles the Port Chester/Greenwich, CT border, is looking forward to broadening its Fairfield County audience with the opening of its second location on SoNo’s popular Washington Street.
“The Norwalk location feels like a natural extension for us as our current location has such a large Fairfield County customer following," says Montoya. “We are looking forward to being in a coastal community and being a part of the energy and popular dining scene that SoNo is known for.”
Chef/Co-owner Ismael Carias, formerly of Crew Restaurant in Greenwich, CT, will present his interpretation of French cuisine in Appétit Bistro SoNo, which includes such customer favorites as Escargot en Croute with pastis maître’d butter, a classic Salade Lyonnaise of frisée, bacon, and a soft poached egg dressed with sherry vin, Duck Breast à L’orange, Lemon Sole with a caper-brown butter sauce, and of course, Steak Frites with peppercorn sauce.
“While our menu continues to evolve, we believe in staying true to our concept," Montoya says of the many dishes that have remained on the menu since they opened in Port Chester in May of 2015. “Seasonality and the best quality ingredients are reflected in our mostly French menu. We also enjoy preparing Mediterranean and Italian influenced dishes as seen with our popular Chicken Scarpariello and Linguini with Seafood.”
Appétit Bistro SoNo is located at 136 Washington Street. Wrapped in floor-to-ceiling windows, exposed brick walls, and eclectic artwork, the new bistro conveys a more urban design aesthetic, and its larger footprint allows for a private dining room in addition to the main dining area, as well as a bar that boasts a full liquor license. The Bistro’s beverage program will feature classic cocktails, ales and lagers, and a small, curated wine list consisting of primarily French and California labels.
In addition to the new restaurant, Edwin and Chef Carias will be opening a seafood/prepared food market next door at 132C Washington Street. Fresh fish, produce, pasta, meat, and dishes to-go will be the focus, in addition to specialty food products and baked goods.
