New Filipino/Asian Restaurant to Open in Nyack


Lydia taught him to cook.  Not Lidia Bastianich, but his Mom, Lydia Mendoza – Paolo’s first teacher of life - and it appears of food - in this case, Filipino food.

Paolo is Paolo Garcia Mendoza, Chef/Owner of the brand new restaurant Karenderya coming soon to Nyack. Along with his wife and business partner Cheryl Baun, they will turn what was previously the Peruvian restaurant Mauras into Karenderya, Filipino/Asian cuisine. The concept will be a Filipino-inspired casual concept eatery. The idea is loosely based on the Filipino carinderias, affordable roadside food stops found all over the Philippines. 

Paolo, who grew up in Pasay City, Phillipines moving to Brooklyn at 15 was not only trained by Lydia, but attended the Institute of Culinary Education (formerly Peter Kump’s New York Cooking School). He has 13 years of working experience in the restaurant business most recently as Sous Chef at Roost in Sparkill.

Paolo and Cheryl’s vision is to have about 30 seats.  The atmosphere will be laid back, hip and kid friendly (their family includes Diwa, their 8 year old son and Hiraya their 4 year old daughter).  It will be a full service restaurant where a patron can order at the counter but also gives diners a take out option.

Dishes like pork belly braised in soy, vinegar and garlic; mussels with a coconut ginger broth and salmon in a sour tamarind broth will appear on the menu.  Many of the dishes will come as a sandwich or a bowl.

Cheryl who grew up in New City, is also the owner of More Mission www.delivermoremission.com co-founder of Rockland Families for Social Justice, a 400+-member organization dedicated to creating a community of socially-conscious families who learn compassion and empathy by speaking out against injustice and participating in local service projects, as a family unit. 

Cheryl graduated from Vassar College with a B.A. in Sociology and holds a Master’s degree in Urban Planning from the Robert F. Wagner School of Public Service at New York University.
