The owner of Food Evolution (formally known as So Good Vegan Cafe) says she is thrilled to have the chance to feed and nourish her local community. "We have introduced dishes that will WOW people," says former Wooster School teacher turned restaurateur, Elizabeth Shine Berney.
"I was one the first (and best) customers of So Good Vegan Cafe," admits Berney, who lives a stone's throw away from Food Evolution. The new name was born of a quote by Albert Einstein. "Einstein said, Nothing will benefit human health and increase the chances for survival of life on Earth as much as the evolution to a vegetarian diet."
Berney has been vegan for 8 years and says, "This is a passion, it is my lifestyle and has become who I am." Her husband, who is not vegan, challenges Berney to create flavorful plant-based meals. The menu includes contemporary vegan favorites such as Nori rolls and a portobello mushroom burger. "Our vegan nacho appetizer has been a huge hit with customers," says Berney.
Food Evolution is located inside The Marketplace at Copps Hill, 109 Danbury Road in Ridgefield.
