Owners of Ridgefield's Sucré Salé to open French Patisserie

Frank and Virginie, the owners of the French Restaurant Sucré Salé in Ridgefield, CT are taking over the retail space of the former Swoon bakery and turning it into a French Patisserie: Martine.

Frank, a trained Chef from the region of Brittany in France, has been working in the culinary industry as a chef and restaurant owner for the past 30 years. He has owned restaurants in France, New York and now Connecticut. His unwillingness to compromise on the quality of the dishes and his obsession in finding the best ingredients free from any preservatives and additives has borne fruit as Sucré Salé which was picked by Connecticut Magazine as one of the best French restaurants in Connecticut in 2017. 

The adventure of opening a bakery-quiche business in Ridgefield, CT started 3 years ago, when Frank and Virginie were looking for a small retail location to start a Patisserie. They deviated from their original idea as they were offered a bigger space and started a bakery/restaurant with a seating area. After 7 months, they moved again to a bigger space and started a full-service restaurant. Three months ago, Frank’s dream of opening a bakery/quiche place became a reality.

Frank and Virginie are currently in the process of taking over the retail space adjacent to Sucre Sale, the former Swoon bakery, and turn it into a Patisserie called Martine. In addition to their delicious quiches they will be offering fresh homemade cakes, tarts, and of course Frank’s famous lemon-meringue tarte, as well as imported French products. Freshly baked delicacies such as flavored French macarons, flaky mille feuilles, rich chocolate creamy Éclairs, choux pastries, Opéras, Quatre Quart, and buttery croissants will also be available.  Martine is set to open in early Spring.
