Surf’s up and the waves are big at Baja Cocina

It was after a trip to Todos Santos, Mexico when Larry and Jacki Debany became heated up about bringing tacos and Mexican specialties to Ridgefield.

Baja Cocina is set to open in downtown Ridgefield soon. Don’t ask for a date, Larry Debany needs to perfect his dishes and immerse his staff in everything Baja before he officially opens his double doors on Main Street.

“We got our inspiration in the Baja region of Mexico where there’s a lot of surfing, whale watching,” says Jacki, who adds, “We’re doing Mexican the Baja way.”

Baja cuisine features regional dishes inspired by Baja California, Mexico - a place known for its agriculture, coastline, fishing. At Baja Cocina (Spanish word for kitchen) you can build your own meat, fish, or veggie tacos and rice bowls, dig your teeth into savory street corn, and bask in wholesome ingredients and authentic Mexican flavor.

The decor is fresh and vibrant, just like the food. You’ll feel like you’re on a beach somewhere on the Pacific coast when you step into Baja Cocina at 426 Main Street. The bright lime(ish) green and rich blue walls, bright orange Baja Cocina tees, rustic wood floors and beachy accents give the casual dine in/take out restaurant a California (Mexico) vibe. It's the kind of place that makes you want to live the flipflop, shorts, tee shirt life, 365 happy days a year.

To accompany the ultra-fresh Mexican cuisine, Baja Cocina will serve Mexican bottled beer and a few varieties of Spanish wine including Verdejo, from the Rueda region of Spain.

My guess is that Surf’s Up sometime in early April. Don’t make me wrong Larry.
