A plant-based culinary medicine educator, Cathy is a personal chef, cooking instructor, lifestyle coach and Food Editor and Feature Writer for VEGWORLD Magazine.
Why did you start your business?
I started Cathy's Kitchen Prescription in 2014. A professionally-trained chef, certified in plant-based nutrition, think of me as a plant-based culinary medicine educator. I offer personal cheffing, group and private cooking instruction, and lifestyle coaching to our community. I give educational talks, work with families, and support local doctors whose patients are trying to clean up their diets and take advantage of the many health and environment benefits from eating whole plant foods. I am also a feature writer and Food Editor for an online bimonthly VEGWORLD Magazine, a great free resource for informative articles and interviews and recipes.
After a traumatic health scare in my family (and what family not been traumatized by heart disease, cancer, diabetes, obesity, and autoimmune diseases?), my family adopted an entirely plant-based diet. The results were miraculous...I'd say life-saving! Unexpectedly, other ancient conditions, like migraine and GERD, soon resolved. Chronic inflammation plummeted, blood pressure and cholesterol levels dropped. With no dieting, our weight returned to numbers we hadn't seen since high school. And we have so much energy! I went back to school to educate myself in plant-based nutrition and train as a chef, and then opened Cathy's Kitchen Prescription.
Finish this sentence in regard to your business: I wish I could...
My wish, my hope, is to share with others what we learned the hard way and spare them the suffering, fear, and cost of having a family member with a serious chronic, degenerative disease. It turns out that, when it comes to chronic illnesses, lifestyle trumps genetics. The conditions today that commonly shorten our lives and rob us of quality, are driven by lifestyle, and particularly, by diet.

Ridgefield is blessed with a wealth of groceries with beautiful produce and I depend on them. I'd like to give a shout out to Ridgefield Organics, Nature's Temptations, and of course, our local Stop and Shop.
