Three questions with Yonatan Carrillo, co-owner of Daniels Food Truck.

Why did you start your business?

Daniel's Food Truck is a family-owned business. We've been open for about three years now. 

My dad, Jose Carrillo had started a construction company which was successful and always busy. I helped in various aspects of his business while attending school and having a fulltime job. Unfortunately, at the beginning of 2016, my dad got hurt badly and with no one able to take over the company, we were forced to rethink our situation. My dad one day came home one day with a thought: food.

My mom had experience in the food industry having worked for fifteen years at Subway. My dad had some training in the food industry and I had five years of experience while working at Fairway Market as a customer service manager. We all agreed on owning a Food Truck business.  The last detail was to name it. That's where the youngest member of the family came in - Daniel. We couldn't come up with a name until he came home from school one day and asked if his truck was ready.

When the first truck was built, we didn't invest much in the aesthetic look of the truck. We bought it and left almost everything on the outside the same; the inside became the main focus. The main focus, unfortunately, would come back to bite us in the rear a little later. Turns out we had run out of money so while we had a perfect truck inside, the outside still had a giant out of place decal from the company who first owned it! It was a burden but also became motivation. We placed ourselves in the underdog position from day one. Because of that giant decal, we had to work a lot harder than everyone else. We had to innovate and evolve.

Best selling product/service?

On the truck, our best selling product is always a combo. We offer great customer service! In addition, all of our Guatemalan items are a big hit: Gauchito de la Casa, Shuko Mixto (Guatemalan Hotdog) and the Bistec Encebollado. We also run UberEats and Doordash. On both platforms, the bestselling items are as follows: Lomo Saltado, Bistec Encebollado, and the Chicken Quesadilla.
