
Garlic lovers rejoice: Garlic scape season is here! Enjoy the first taste of garlic in the plant's curly stalk before the bulb is harvested. But don't delay—this seasonal treat is only around for a couple weeks before the scape becomes too tough.
Garlic pesto is the best way to use and preserve the garlic. Once made, fill an ice cube tray with the pesto and pop out when needed. Spread pesto on your burgers. It's also great for garlic bread and fish.
Ingredients:
- 1 cup garlic scapes chopped
- 1 cup extra virgin olive oil
- 1 cup freshly grated parmesan cheese (optional)
- 1 teaspoon salt/pepper
Instructions:
- Place all ingredients in a food processor or blender and puree until smooth.
- Refrigerate covered for up to two weeks. The flavor will mellow some as it sits.
